Buckeyes (Chocolate Covered Peanut Balls)

 

4 cups icing sugar

1/2 lb. butter or margarine

1 500 gram jar peanut butter

1/2 tsp. vanilla

Approximately 4 cups chocolate chips

1-2 tsp. solid shortening

 

Cream butter, add sugar, peanut butter and vanilla.  Roll in small balls.  Cool in fridge or freezer.  Melt chocolate with shortening in double boiler.  (I use microwave at 50% power - be careful as it can burn).   Using toothpick or spoon, dip balls into chocolate.  Set on wax paper.  Makes 50-60.  Store in fridge or freezer.
